Delicious and Easy Lemon Drizzle Cake Recipe



I haven't done a recipe post in a while so I decided I would take some pictures when doing my latest bake so I could share it with you. The pictures aren't of the highest quality because it was getting dark, and to be honest the cake does look a bit boring, but this recipe is all about the taste! It is so lemony, zesty and tangy, perfect for all you citrus lovers!

1) Preheat the oven to fan 160, and grease line a loaf tin.

2) Sift 175g of self-raising flour and 1 teaspoon of baking powder into a large glass bowl.





























3) Add 175g of margarine, 175g of castor sugar, 3 egg and 4 tablespoons of milk to the dry ingredients.





























4) Beat until smooth with a mixer to ensure that all the ingredients are fully combined. It should lighten slightly in colour; this shows that it is properly mixed.

5) Add the rind of two lemons and mix in lightly with a wooden spoon,





























6) Spoon the mixture into the prepared loaf tin, and hollow out the centre. Bake in the preheated oven for 55 minutes.





























7) As soon as the cake comes out of the oven, turn it on to a wire rack to cool.

8) Use a skewer to make lots of holes all over the top of the cake. Push it in and then twist to make sure the holes are big enough.





























9) Wait for the cake to cool fully then heat together the juice of one lemon and 60g of castor sugar in a saucepan. Only a low heat is needed.

10) Spoon the drizzle over the cake. It will sink into the holes so it spreads through the cake. Some of the drizzle will run through so ensure the wire rack is on a surface that can easily be wiped clean.





























11) Leave the lemon drizzle to settle into the cake and then transfer it to your chosen serving plate.

12) Enjoy your cake!

Easter Cookie Dough Pizza Recipe

Hey guys! So I have a different type of post for you today; a recipe! I love baking and have done from a very young age, so I'm really happy to be including another one of my hobbies on my blog. This recipe is really yummy and is a great treat for any celebration. You can simply adjust the toppings to make it perfect for Christmas, birthdays, sleepovers or anything really! I also really like that it only requires basic ingredients so I can make it whenever I have a craving for something sweet. So here goes...

1) Preheat your oven to 180 degrees.

2) In a bowl, cream together 125g of butter, 100g of castor sugar and 100g of light brown muscovado sugar. You can do this by hand, or with an electric mixer.

3) Crack 1 egg into the bowl and mix well.



4) Add 1 teaspoon of vanilla essence or extract and stir it in.

5) Sift 150g of plain flour into the bowl, then fold it in. Don't be too vigorous or you will over beat the mixture and it won't rise.


6) Stir in 75g of chocolate chips and your cookie dough mixture is complete!



7) Transfer the mixture to a circular tin, and bake for 20 minutes until lovely and golden. It should look quite done on the outside, but don't worry, it will be lovely and gooey inside!



8) Once the cookie dough has cooled slightly, you can begin to decorate it. I began by putting a ring of nutella around the edge to imitate the tomato sauce. This adds a nice bit of flavour without the sickliness that covering the entire cookie would give. (excuse the hole in mine, I managed to stick my oven glove in it whilst taking it out the oven haha)


9) Now you can make some buttercream to be the 'cheese' of the pizza. You can buy some frosting and colour it yellow if you like, but I prefer the taste of homemade buttercream. I totally made up the quantities as I went along, adding more butter or more icing sugar to get the flavour that I wanted. I then added a bit of milk to give the right consistency.



10) Next, cover your cookie dough with the buttercream or frosting. You want to leave a little bit of nutella showing around the edges to give the most realistic finish.

11) Finally, add your chosen decorations to your pizza. I chose to use silver balls and some micro eggs to decorate mine. Micro eggs are basically a smaller version of mini eggs that are a great size for baking. I bought mine from Tesco.



And there we have it; your very own cookie dough pizza! You can eat this as soon as you've finished if you still want it to be slightly warm, but my family actually think it tastes better the day after baking when all the flavours are more distinct.
